How to serve up success through segmentation (restaurant edition)

In the hospitality industry, understanding and catering to the specific needs of different consumer segments is crucial for creating successful restaurant brands. A significant 50% of the UK population buy food or drink at a restaurant at least once a fortnight, meaning that restaurant goers are likely to be a broad and diverse group. Instead, by understanding the various segments that exist within this large group of restaurant goers, brands can start to create a more targeted strategy that ensures their offer effectively engages one or two key segments.

Let’s take two example segments and see how they would view a dining experience, and their different needs and motivations:

The Family-Focused segment is looking for an environment that welcomes kids and is set up to cater to them. On the other hand, the Busy Professional segment is looking for something sophisticated and easy, with a quiet environment. Trying to appeal to both of these groups with the same restaurant offering is going to be hard.

Tailored approach for the Busy Professionals segment: for this segment, restaurants might implement a streamlined ordering process, offer a robust online booking system, and create a menu of high-quality lunches that can be served quickly. The physical layout might also include quieter areas designated for business meetings or solo diners.

The importance of segment-specific approaches

  • Different needs and expectations: each consumer segment has unique needs and expectations that influence their dining choices. For example, families dining with young children prioritise comfort and convenience, such as kid-friendly amenities and quick service, to ensure a stress-free meal. In contrast, busy professionals may seek efficiency and convenience, favouring restaurants that offer fast service, takeaway options, and a quiet environment to conduct meetings or relax after work.
  • Enhanced customer satisfaction: by understanding and addressing the specific preferences of these segments, restaurants can enhance overall customer satisfaction. This targeted approach ensures that each customer feels valued and understood, leading to increased loyalty and positive word-of-mouth.
  • Optimised resource allocation: focusing on particular segments allows restaurants to allocate their resources more effectively, be it through marketing efforts, menu design, or service enhancements. This focus helps in creating a more impactful dining experience that is directly aligned with the expectations of their chosen demographic.

Implementing a targeted strategy

  • Choose your audience: restaurants must decide which segments align best with their brand identity and business goals. This decision should be informed by market research, competitor analysis, and an understanding of local demographics
